Every year, during the holiday season, time seems to vanish as quickly as Santa whisks up the chimney.

There is too much to do, too much to buy, party goodies to prepare, and families to feed, as well. For this busy holiday season, try these quick recipes. None of the recipes require much cooking, if any, so they can be whipped up in no time for a quick family meal or to take to an office party.

Tortilla Pin Wheels

20 large flour tortillas
2 packages softened cream cheese
2 small cans chopped green chilies

Mix the cream cheese and green chilies together. Spread each tortilla evenly with 2 or 3 tablespoons of the cheese mixture. Roll the tortilla. For best results, refrigerate for 15 minutes or longer. Slice the ends off the rolled tortillas and save these for snacks at home, then slice the rolled tortilla every 3/4", giving small pinwheels. Guests love these small treats. Be sure to make plenty!

Berry Angel Cake

1 purchased Angel Food cake
1 pint of strawberries or other fresh berries
1 quart tub of Cool Whip

Ice the cake with the Cool Whip. Fill the center of the cake with fresh berries. Keep refrigerated.

Party Punch with a Caffeine Kick

1 cup of Instant Raspberry Tea
1 2-liter bottle ginger ale or club soda

Chill the soda. Mix the instant tea into the soda and serve over chipped ice. Delicious, but not for the faint of heart!

Sweet Poppy Seed Slaw

2 packages of Dole coleslaw salad
3/4 cup Poppy Seed Salad Dressing

Pour shredded coleslaw veggies into a very large mixing bowl. Add dressing and stir well. If needed, add a little more dressing. Cover with plastic wrap or aluminum foil and refrigerate for thirty minutes. Stir again. Volume will decrease while refrigerated. Put slaw in a smaller serving dish. Keep refrigerated.

PB Barkies

1 box Ritz crackers
Peanut butter
1 package almond bark

Make peanut butter and cracker sandwiches using the Ritz crackers. Melt the almond bark over a low heat. Using a spoon, dip the peanut butter crackers into the almond bark. Set on waxed paper to cool and harden. These are also a great gift idea. Line a small Christmas or holiday tin with waxed paper and fill with PB Barkies. These are also good made with vanilla wafers instead of crackers. Caution: These are habit forming!

Mushroom Soup

This soup is great for chasing away cold winter chills or as an appetizer for a holiday meal. The taste rivals that of mushroom soup in fine restaurants. It also goes well with Oven Grilled Ham and Cheese Sandwiches.



2 cans Campbell's Condensed Mushroom or Golden Mushroom Soup
2 tablespoons margarine
1/4 cup sour cream

Prepare the soup according to the directions on the can. Do not allow to come to a boil. Slowly stir the margarine and sour cream into the soup. Pour into large mugs to serve. Makes 3 to 4 servings.

Oven Grilled Ham and Cheese Sandwiches

1 loaf whole wheat bread
1 lb. deli-sliced Black Forest Ham
1 lb. sliced cheddar cheese

For each sandwich, lightly butter two slices of whole wheat bread. Place one slice, butter down, on a cookie sheet. Layer a slice of cheddar cheese, desired amount of ham, and another slice of cheddar cheese on the bread. Top with the other buttered bread slice, with butter facing up. After all sandwiches are made and placed on the cookie sheet, bake at 350 degrees F for 10 minutes. Turn sandwiches over, and place back into oven until bread is lightly toasted.

Sweet Potato Casserole

2 large cans sweet potatoes, drained
1/2 cup of brown sugar
1 tsp. cinnamon
1/4 cup chopped pecans
2 cups marshmallows, if desired

Put sweet potatoes in blender and puree. Pour in bowl. Add brown sugar, cinnamon and pecans. Mix well and put in a quiche dish. If desired, top with marshmallows. Lightly sprinkle a little more cinnamon on top of the marshmallows. Bake at 350 degrees F for 15 to 20 minutes, or until marshmallows brown slightly. This recipe is good without the added sugar, too.
