I'm not a professional cook by any means. But I have collected quite a few healthy recipes from my clients over the years. I try to include at least one healthy recipe in my newsletter each month. I thought it wouldn't be a bad idea to post them here as well so people that don't get my monthly newsletter can at least get the recipes. If you end up using any of my recipes please email me with your comments. I would like to know what other people think.
"Power Pancakes"
- 1 1/2 Cups Uncooked Old Fashioned Oatmeal
- 1 Cup Cottage Cheese
- 1 Cup Vanilla Yogurt
- 1/2 Cup Wheat Flour
- 2 Eggs
- 1/2 Cup Ground Flax
- 2 Tbsp Vegetable Oil
- 1 tsp Salt
- 2 tsp Baking Soda
- 2 tsp Baking Powder
Start by cooking the oatmeal. You can do this in the microwave, since it isn't really important that the oatmeal is completely cooked. Then slowly stir together all of the ingredients in a large mixing bowl. The batter should have a somewhat "chunky" texture, a little thicker than regular pancake batter. You now have your "power pancake" batter. Lightly coat the griddle with a canola margarine substitute or vegetable oil.
Set the temperature of your griddle to 350-400 degrees. Cook these pancakes a little slower than you would cook normal pancakes. To make sure you don't burn them start out with your griddle on a lower temperature until you figure out the right setting. Makes about 12-16 pancakes. Extra batter can be stored in the refrigerator for 3-5 days. Top them off with some canola butter and a little honey. Let me know what you think.
