This quick and easy chicken dish makes an elegant presentation when sliced. It's equally perfect for a company dinner, weeknight supper or party appetizers.

4 boneless, skinless chicken breasts
4 cups fresh, raw spinach leaves
1 small jar roasted red peppers in water, seeds removed and chopped
4 oz. shredded Parmesan cheese
1 tbls. melted butter
Garlic powder
Salt
Pepper
Paprika
Toothpicks
Preheat oven to 375 degrees. Grease a medium size baking dish or use cooking spray. Place chicken breasts in a large zipper bag and flatten to about a ¼ inch thickness. Sprinkle each breast with garlic powder, salt and pepper to taste. Layer on each chicken breast the spinach leaves, red peppers and Parmesan cheese, dividing evenly. Roll up each chicken breast being careful to keep stuffing inside and secure with toothpicks. Brush tops of roll ups with melted butter. Sprinkle with paprika. Bake 35-40 minutes or until juices run clear. Remove toothpicks. Makes 4 dinner servings or 8 appetizer servings.
*To serve as appetizers, slice each chicken breast into four pieces and place a toothpick into each piece. Arrange slices overlapping on a serving platter.
*Make ahead: Prepare Roll ups up to six hours in advance and refrigerate until baking time.
Note: This dish can be very versatile when using substitutions. Instead of spinach and roasted red peppers, try using chopped green onions, crumbled bacon or chopped artichoke hearts. As a substitute for the Parmesan cheese, try Monterey jack, cheddar or blue cheese. Different seasonings can also be substituted according to your taste. Be creative and have fun with this recipe!
